After the last few weeks, the kitchens of Full Moon Cuisine decided that this week's entry needed to be a bit lighter. Combining lemons and a mild cheese, these soft and chewy cookies will be a big hit for your diners. Here's what you'll need:
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 stick of butter (at room temp)
- 2 eggs (at room temp)
- 2 cups granulated sugar
- 1 15-oz container of ricotta cheese (whole milk!)
- Zest and juice of 1 lemon
- Pinch of salt
Note: This recipe will make approximately 3 dozen cookies.
To begin, preheat your oven to 350 degrees F. In a small bowl, combine your dry ingredients (flour, salt, baking powder) and stir. In a larger bowl, cream together the butter and sugar, then add your eggs one at a time. Next, add in the ricotta cheese, lemon zest, and lemon juice, mixing to combine. Line a cookie sheet with parchment paper and use a small ice cream scoop to portion out the dough. Now, this dough will be quite wet and soft... but do not worry! These cookies will NOT spread a lot when baked. You do NOT need to refrigerate prior to baking! Bake for approximately 15 minutes, then allow to cool on the baking sheet for another 10 minutes before transferring to a cooling rack.
These cookies will be quite soft and light in taste... so we need to turn the volume up with a quick, easy, and tasty glaze! Here's what you'll need:
- 1 cup powdered/confectioners sugar
- Zest and juice of 1 lemon
Mix these two ingredients together and add more sugar or juice until you get the consistency of a glaze. It should be able to spread on a cookie, without being too watery. Spoon 1/2 tsp of glaze onto each cookie, then use the back of the spoon to help spread it around. Park your cookies in the fridge for a couple of hours to allow the glaze to harden.
These light cookies go great with a cup of coffee or tea and will be the perfect end to any meal. And since they require very few ingredients and time, you will be able to make these easily and in any quantities to satisfy your diners.
