Put a bit of spice into your morning with this humble and rusic mexican breakfast from the kitchens of
kawakoi
Tired of the same old breakfast? Spice it up with a mexican twist!
Ranchero Sauce:
1/2 Onion, Medium Dice
1/2 Bell Pepper, Medium Dice
1 Jalapeño, Fine Chop
1 Anaheim Pepper, Medium Dice
1 8 oz. Can Tomato Sauce
Hot Water As Needed
Salt and Pepper To Taste.
1. Sauté the veggies in a small saucepot for 5-6 minutes.
2. Add the tomato sauce.
3. Adjust to desired consistancy with hot water.
4. Adjust seasonings to taste.
To Assemble:
Corn Tortillas
Eggs
1. Heat enough oil to completely coat the bottom of a small sauté pan.
2. Heat tortillas one at a time in the oil until they are soft and then transfer to your plate. Dab off excess oil.
3. After the tortilla's are done, cook the eggs in the same pan, drain oil as needed before cooking the eggs. Traditionally cooked over easy or sunny side up.
4. Place eggs over the tortillas and cover with the ranchero sauce. Enjoy.
