Banana and Nutella, does it get much better? It's a combination I've used before in cake (LINK)
Anyway I thought "Wouldn't Nutella chips be delicious" so I looked to the internet.
It had been done, and I wanted to try!
Cookie Ingredients:
1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon kosher salt
1/2 teaspoon baking soda
3/4 cup unsalted butter, at room temperature*
1/2 cup granulated white sugar
1/2 cup light brown sugar, packed
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup ripe banana, mashed**
1 cup oat flour***
Nutella chips (Recipe to follow)
Cookie Directions:
1. Preheat oven to 375° and prepare pans as you prefer.
2. Combine flours, salt and baking soda in a medium bowl.
3. 3. In a large bowl, beat butter and sugars with an electric hand mixer; mix on medium speed until pale and fluffy.
Reduce speed to low and add egg and vanilla; mix until combined. Mix in banana. Add flour mixture;
mix just until combined. Stir in Nutella chips.
4. Drop by scoopfulls onto baking sheet and bake for 11-13 minutes
(I chilled my dough for a few minutes so the nutella chips would better hold their shape)
5. Let site on the baking sheet for a few minutes before transferring to cooling rack.
Notes:
* I used shortening instead of butter, with butter I found they spread too much for my liking.
** I always keep cut up banana in the freezer so I threw it in the blender with the vanilla, made it much easier.
*** You can use just oats/omit if you'd like. I wanted the stability w/o the texture

Well, since the internet already did it here you go: Homemade Nutella Chips
(I spread mine onto a lined baking sheet, popped it into the freezer and cut into chunks)
