Enjoy this munchable mouthful from the kitchens of
morphine
A friend requested I make them oatmeal cookies and I thought, "How boring"
Well I went shopping the other day and they had dark chocolate covered pomegranate on sale (From Brookside) and it gave me ideas.
(I also picked up the Açai)
Not only are these chewy and delicious, they smell amazing when they come out of the oven.
Ingredients:
1/2 cup butter, softened (or shortening)
2/3 cup light brown sugar, packed
1 large egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour*
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon table salt
1 1/2 cups (120 grams) rolled oats
3/4 cup Dark chocolate pomegranate, chopped (Unless you want bigger pieces)
Directions:
Preheat oven to 350° and prepare your pans.
1. Cream together the butter, brown sugar, egg and vanilla until smooth
2. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together.
Add flour mixture to the butter mixture.
3. Mix in oats and pomegranate.
4. Let chill for about ten minutes in the fridge before baking.
5. Scoop onto prepared pans and bake for 10-12 minutes.
(Try not to drool when you open the oven)
6. Let site on cookie sheet for a few minutes then transfer to cooling rack.
Notes:
* You could probably use oat flour instead of AP but I think the cookie would get very dry.
