Ratatouille:
(this recipe fills 2 casserole dishes)
Roasted Garlic, Extra Virgin, Olive oil
freshly grated Mozzarella
1 large eggplant
1 zucchini
1 banana squash
1 green bell pepper
1 large onion
2 large tomatoes
2 cups mushrooms
Parsley (garnish)
- Preheat oven to 350 F
- slice the vegetables, grate the mozzarella,
- heat 1 Tbs Olive oil in a skillet on medium heat
- saute the eggplant slices (6 slices at a time) until lightly browned on the edges.
- gently place the first layer of eggplant slices in a large casserole dish and top with the mozzarella.
- layer the other sliced vegetables; zucchini, tomatoes, mushrooms, onion rings, squash, bell pepper, in any order you wish, topping each layer with mozzarella.
- continue to layer, repeating the last 4 steps for both dishes
- toss both dishes in the preheated oven for 45 minutes.
