Isn't it VILE? And they all do it. Im sure they have their reasons, but trying to explain it to non-rat people who are going 'eeeuw! He's eating his ear funk!' is always quite amusing.
Maybe they're just saying 'hmmm, whats this I've dug out of my ear? Better taste it to make sure its normal'.
I know humans who do that, too........
