Keeping in the theme of simple meals is this filling and satifying meal from the kitchens of

Not So Green Eggs and Sausages
Something simple and easy to prepare for even the most cooking challenged person out there. Fried egg and cheese sandwiches with sausage.
Ingredients:
2-4 eggs
Cheese (any flavor of variety of your choice or favorite)
Sausage links
Butter
Bread (same options as the cheese)
Optional ingredients:
Lettuce
Tomato
Avocado
Pickles
Onions
Pico De Gayo
or anything else you desire
Preparation:
Preparation is easy, in a small sauce pan melt a small amount of butter to coat the pan and to keep your eggs from sticking.
In one pan cook 2-4 sausage links, patties to taste. While they are cooking, toast bread to desired crispiness, place butter in pan, melt and thoroughly coat. drop to large eggs and cook to desired taste. When the eggs are nearly done, place desired amount of cheese on top to melt before placing on top of toast or bread. Add desired toppings.
Plate and enjoy.
Normally I use three different cheeses on my egg sandwiches, pepper-jack, Mozzarella and fiesta mix, but in this case all I had was pepper-jack. As for the bread, I always use potato bread as I feel it best holds the the eggs without getting soggy like other with other breads. Next I do this, I will be doing the sandwich the proper way
