
This is what I am currently making for dinner. This is called Ring Around the Roast (or a variation of it). Around this pork roast are golden nugget potatoes, baby carrots, whole mushrooms, and celery.
Ah, crap, I forgot the onion! I don't really like onion myself, but it does add to the flavour of a roast. Oh well. Next time.

there is no set way of cooking this, but what I do is I put the roast in the roasting pan with about 2 cups (500mL) of water and a quartered onion, then cook until about half way done on a Med-Low to Medium heat.
Add potatoes (you can use cut up chucks of larger potatoes like Russets if you want.
Let that cook for a short while (15 mins, give or take depending on the size of your potato piece.. larger pieces need longer time to cook).
Add in your other veggies like Carrots, Celery, Mushroom, and what ever else you like (Peppers, Bok Choy, etc) and cook for another 15 to 20 mins or until meat is to your liking..
Other things you can add at any time are a bit of herbs and spices, but that is just to taste. If you are the type that likes gravy, you can make gravy out of the liquid at the bottom of the pan easily enough.. just sift in a bit of flower slowly while mixing on a LOW HEAT.
