I've been on a canning kick the last few days with my pressure cooker and some tasty things are starting to come out of it.
Pork and Beans
1lb white beans
1 regular block of salt pork from safeway
1tbls onion powder
2 small cans tomato sauce
1 tsp salt
1/2 cup dark molasses
1 cup dried mix veggie flakes from GEL spice
Optional (leftover ham)
-soak beans overnight in water
-put beans, salt pork, and veggie flakes in crock pot and cover with 1-2 inches water and put on low all day. amount of water is dependant on your crock size
-pour mixture from crock pot in to regular pot, but remove salt pork. My salt pork had a good chunk of meat in it so I cut up the edible part and put it back in the beans. mmmm pork
-add onion powder, molasses, and tomato sauce to pot and put on medium heat for about 20-30 minutes stirring so the bottom doesn't burn.
I recommend letting the beans sit overnight so the flavors marry, but you can start pigging out right away.
I preserved mine in quart jars at 12psi for 90 minutes so I have something tasty for the zombiepocolypse
