
Ichiran Hakata-style ramen, hailing from the nearby city of Fukuoka. When I leave Japan this will one of the foods I'll crave the most Holy crap this ramen is heavenly rich. This ramen in particular is from a famous chain called Ichiran, where you sit at a private booth and fill out a sheet of how rich and oily you'd like your soup, the way the noodles are boiled, even the kind of green onions that go on it. The soup is the basic tonkotsu style, made from the marrow of pig bones boiled for hours and hours until it's broken down into a creamy, savory stock that's to die for.

Yep, I'm from the states. But right now I'm studying in Japan. xD If you want it spicy, you can ask them to top it with their special sauce. I order mine without it. I do know how to cook it thankfully. I just need to go hopping from butcher to butcher looking for full pig bones. I guess what I'll miss the most is the different varieties. Each shop has it's own different take on the dish.
