How should I - or any mortal at all -would know, how a powerful Dragon Goddess would punish those mortals, who angered Her?
She could do personal harm, or psychological torture, or just kill them off, as Her time may be expensive to waste.
If I would be in Her place: I would enrich the persons senses. I'd give them many more senses, and then fill them all with pain! Never-ending pain.
So much pain, that the person would go mad, and eventually kill themselves off, to make the pain go away...
But I'm a little vengeful. Who knows what Tiamat is like, when She is really angry? I'm clever enough not to find that out!
