I cooked it mahself
Chicken apple curry, over rice boiled in chicken broth, topped with pepper and a dash of salt, and then cucumber disks on the side, topped with a celery leaf, the taste of celery really brings out the spices in the curry. Perfect romantic dinner for two people. *wags* Mmmm too bad I dont got anyone to share it with. But I'll eat half now the rest in the morning. Mmmmm really good though.
Ingredients
2-1/2 teaspoons butter
5/8 small onion, chopped
5/8 apples - peeled, cored and finely chopped
2-1/2 teaspoons all-purpose flour
3/4 teaspoon curry powder
2-1/4 skinless, boneless chicken thighs
1/4 cup and 2 teaspoons hot chicken broth
1/4 cup and 2 teaspoons milk
salt and pepper to taste
Directions
This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 6 to 8 servings.
1. Preheat oven to 350 degrees F (175 degrees C).
2. Saute apple and onion in butter or margarine until tender. Add curry powder and saute 1 minute more. Add flour and continue to cook 1 minute longer. Add stock or broth and milk; stir well.
3. Salt and pepper chicken breasts to taste and lay in a single layer in a 9x13 inch (or larger) baking dish. Pour sauce mixture over chicken breasts and bake in preheated oven for 45 to 50 minutes, until chicken is done.
Rice
Ingredients
1 cup of chicken broth
1 cup of water
1 1/2 cup of rice
Directions
1. Heat broth for five minutes
2. Add in rice and water, stir occassionally and heat till boiling on medium heat.
3. Reduce heat and cover, let water evporate and remove from heat.
Plating
This is the way I did it.
1. I placed the rice on a large plate and using a spoon made it into a large rectangle, keep it even.
2. Dash on salt and pepper, more pepper than salt,
3. Add on the chicken, I sliced the thighs in half and placed it ontop off the rice.
4. Take some of the curry sauce and add it over the chicken and rice, make sure to get those apples and onions.
5. Peel, or dont peel, a cucumber, slice into disks and place them on the plate.
6. Add a celery leaf, celery really brings out the spices.
It tastes really good. You should try it for yourself.
