...I'll be honest, this was really one of those "heck with it" kind of recipes :B
And you can find this in almost any cooking blog :P
All you need-
Soft taco shells (any kind you like)
pre-cooked turkey burger thats been seasoned with that taco seasoning packet
1 box Spanish rice mix (and YES, I dont like box mixes normally, but it saves you a lot of agony)
1 onion, chopped
1 large clove garlic, chopped finely
2 jalapenos, seeded and deviened, then chopped
1 can refried beans
pre-shredded cheese
Your favorite muffin tin (or more preferably a popover tin)
guacamole (optional)
sour cream (optional)
salsa or fresh chopped tomatoes (optional, but I put at least one tomato in the rice mix)
~ an egg just before you put the cheese on top, followed by some enchilada sauce, if you want to make this baked hueveos rancheros style (optional)
And ALL you have to do-
Chop up garlic, onion and jalapeno- get a medium sauce pan and saute with a tablespoon of olive oil, and cook till the onions are translucent...then throw in the boxed rice mix, and prepare according to the box's instructions :3 Once thats cooked, put it to one side to cool for a bit!
Pre-grease the muffin tin with a bit of olive oil- you are going to have to leave some space in between these cups if you want them to cook evenly!
Heat your oven to 325 F then, stuff the tins with the taco shells first, taking care not to break them - then layer it with the taco stuff (rice, meat, beans, cheese, etc- and you can layer it how you like, but I find that doing the rice first helps)
Then cook for about 20 - 25 minutes ... then take out and serve :3
The key is, you have to eat these on the day you make them- otherwise, they get a bit hard if you reheat them, but they are still edible at any rate :P
