This is two recipes from me
one a versatile old favorite, the other a new favorite
Breaded chicken tenders.
(you can use a wide variety of breading for this recipe In the pictured meal I used crushed Olive coast rosemary and lemon kettle chips. I have also used plain bread crumbs mixed with powdered ranch dressing mix, and panko bread crumbs)
Ingredients
1-1/2 cup breading (see above notes for some suggestions)
1-1/2 cup mayo
2 lbs boneless chicken breast cut into tenders
Pre heat oven to 400 degrees
first roll tender in mayo to coat
then roll in breading to coat
Set on baking rack
Repeat until all chicken is coated.
Bake on rack in oven for 20 minutes
Fries
2 lbs peeled baking potatoes
2 tbs canola oil
1-1/2 tbs butter
1 minced garlic clove
2 tbs chopped parsley
1/2 tsp salt
1/4 tsp black pepper
Pre heat oven and pan to 450 degrees
slice potatoes into fries
Toss with oil
Bake on hot pan for 5 minutes
Turn oven to broil, flip fries, and broil for 20 minutes
Just before the fries come out of the oven melt butter, and saute garlic in skillet for 30 seconds
Add fries to skillet cook for 1 minute
Toss with salt, pepper and parsley
