Moist, soft and simply yummy from the kitchens of

Now this was a real treat for me. I don't get to purchase seafood unless its way on special or marked down. I was shopping and they had this delightfully coloured piece of Smoked Cod marked with 40% off. My mind went that would be perfect for a light lunch.
Ingredients:
fillet of smoked cod
1/2 cup milk
1/4 cup water
1 tbsp honey
Method:
Heat water, milk and honey (stir to blend) until just beginning to boil, gently lay in cod fillet skin side up. cook for 3-5 minutes depending on cod thickness, use two spatulas and gently turn over. cook for a further 2 minutes. Remove gently and serve.
A light salad would be a nice accompanyment to this dish or steamed veg.
Note:
I didn't serve this on anything or turn the milk mix into a sauce as I only wanted the fish...which by the way came out soft and sweet. It gently feathered away from the skin and was delicious. My cats loved the honey milk. So nothing wasted.
The milky residue around the fish in the insert picture is also very tasty.
