* Actually, these were supposed to be maple doughnuts...um...I dont have a doughnut mold unfortunately :P
But since some [censored] decided to call FACCC - Spam - ...far be it from me not to respond in my own way !
Maple Walnut Cookies with Spam
*optional
Ingredients
2 cups gluten-free flour (calls for 1 cup all purpose)
0.25 teaspoon baking soda
0.25 teaspoon baking powder*
capful of vanilla*
0.25 teaspoon salt
1 tablespoon melted butter
1/2 cup sour cream*
1 container sweetened applesauce* - about 1/2 cup (It called for one egg, but I decided to make it eggless)
1 12-ounce can SPAM® Classic (I used the 25% less Sodium Spam since I wanted to control the salt content a bit more)
1 teaspoon maple flavoring (um...just...no. I went with pure grade maple syrup, that "flavoring" is just insulting >_<)
3 tablespoons packed brown sugar
0.33 cup divided plus 1 tablespoon buttermilk (went with just 1 to 2 tablespoons regular milk)
0.75 cup powdered sugar (you may need more to get more frosting)
1 cup chopped walnuts, toasted* (You can always leave these out if you're nut allergic, but I wanted the maple flavor to get a bit more oomph with the toasted walnuts in there)
Directions:
1. To make dough, in large bowl, whisk together flour, brown sugar, baking soda, baking powder and salt.
2. In small bowl, whisk together vanilla, 1 tablespoon milk, sour cream and butter. Add to flour mixture- the idea is, it should look more like a dough than a batter. Spoon mixture into pastry bag fitted with large round tip. (Or snip corner of re-sealable plastic food storage bag.)
3. Cut SPAM® into 12 slices. With 1 1/2-inch cookie cutter, cut 2 rounds from each slice SPAM®. Cut small circle from center of each round of SPAM®; reserve scraps. This I did not do- instead, I sliced it up, then...
4. In a large cookie tray covered with foil, cook SPAM® slices until golden with 2 -3 tablespoons of brown sugar spread over the slices, plus about 1 - 2 tablespoons of maple syrup; then when cooked, set aside. Finely chop reserved SPAM® scraps. Cook until golden brown and puffy, (about 10 to 15 minutes) and you can also toast the walnuts while you are cooking the SPAM in the oven.
By that time, the walnuts should be good and toasted (usually it only takes 10 minutes, if that, to toast in the oven) where you can also take them out, let them cool, put in another Ziploc bag and then give it a few good whacks with a mallet to break up the walnut pieces a bit more....then they go right into the dough.
5. Heat oven to 325°F. Grease mini doughnut pans.....er...or, cookie tray :P
6. Fill doughnut molds evenly with chilled batter; top each with SPAM® round. Bake 10 minutes or until doughnuts spring back when cooked. Let cool in pan 5 minutes before turning onto wire rack.
Here I would say- they need a bit longer in the cooking time, because of all the wet ingredients. So more like 15 to 20 minutes on a pre-greased cookie sheet.
To make glaze, in small bowl, combine powdered sugar, and the maple syrup. I also found it helpful to add just a teaspoon of water (or you can use milk or buttermilk) to the sugar mix, since it wasn't enough of a glaze. Stir until mixture becomes loose. Drizzle glaze over warm doughnuts. Sprinkle with finely chopped SPAM®.
The best part is- I still have plenty of SPAM leftover for another recipe...a request from quite a few furs, as a matter of fact :)
