Letters, articles, essays, advertisements, plays, radio plays, raports, even manuals. There's so much that could be done instead of short stories and poems. I have seen a FAQ done in response to the prompt. Why not an ad or a manual? The prompt would be perfect basis for something that would kick the fences of prose a bit.
