Generous Gumbo styled stew full of flavour and colour from the kitchens

I can't really call it gumbo, since I used mostly vegetables and only one variety of meat.
Quantities are approximate and variable, with a good bit of fudge factor (or would that be error margarine?)
1 pound spicy sausage meat; I used hot Italian
1 large Onion, roughly 1 pound
Peppers - several varieties, mild to wild
2 large or 3 medium Tomatoes
1 pound Okra
3 Yellow Squash
2 large Zucchini
Corn, peas, carrots, beans (Easy cheat: bag of frozen veggies. It's a standard mix.)
Cajun seasoning
Optional tablespoon of cooking oil (I used coconut)
Brown the meat (add oil if the sausage doesn't have enough fat or seems a bit too eager to stick.) Chop and add other vegetables; order isn't terribly critical except that the Okra goes in last.
Tip: don't cut the okra until time to put it in.
Simmer about 15-20 minutes over medium-low heat, stirring occasionally. When the juice doesn't quite cover the vegetables, remove from heat, cover and let coast for a bit. Target is a chunky and colorful stew (inset).
Let cool before serving.
