And finally, last but not least, a DELISHUUUS FATTENING CAKE (that is not a lie :P)
Now I bet you're wondering- what the heck is a starfruit? Its also known as a carambola fruit - http://en.wikipedia.org/wiki/Starfruit
However, I would NOT recommend eating this fruit if you have kidney problems!
That said- onto the recipe- which comes from my local Stop and Shop "Healthy Ideas" magazine.
Ingredients:
1/2 cup brown sugar, not packed
2 tablespoons orange juice
2 star fruits, cut horizontally into 1/2 inch slices
1/2 cup canola oil
2/3 cups granulated sugar
1 egg plus 2 egg whites
1 1/2 cups cake flour (I went with 1 1/2 cups gluten free flour)
1 1/2 teaspoons baking powder
pinch of salt
1/2 cup 2 percent fat milk (if you are lactose intolerant, Im sure soy milk or almond milk would work fine with this)
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup chopped walnuts* (optional, you dont have to put those in there if you are nut allergic or dont like them)
So to make:
Preheat oven to 350 degrees F. Grease a 9-inch round cake pan thoroughly, then sprinkle the brown sugar evenly on the bottom of the cake pan. Arrange sliced starfruit as close as possible, pressing down into the sugar, then drizzle the orange juice over the starfruit.
Then you need two bowls, since its a dry-wet recipe. In one medium sized bowl- combine canola oil and granulated sugar. Then add egg and egg whites, beat well with a whisk.
In the OTHER bowl- preferably a large one- combine cake flour (or GF flour) baking soda and salt, mix well. THEN- Add the egg mixture to the flour along with the milk/soy milk/almond milk alternating with the canola oil/egg mixture. Stir in vanilla and almond extracts, and nuts (if so desired) and stir until all the lumps are gone and you have a smooth batter.
Slowly pour the batter over the starfruits, making sure you even in out. Then put the cake pan into the oven and cook for 30 minutes- with my slow oven and the extra ingredients, I'd say more like 35 to 40 minutes but no more.
Let cool for 5 minutes before inverting cake onto the serving plate, then serve!

My tasting notes: Very good, though the almond extract comes on a bit strong.
I would probably leave that out the next time when making this and either put in more vanilla, or maybe some rum ;)
