I made these piñata cookies for Cinco de Mayo this year. They are supposed to be burros, or donkeys, but they were cut out using a horse-shaped cookie cutter because out of ALL the animal-shaped cutters Sur La Table carries, they don't have the one damn animal I want. I tweaked the shape to the metal a little using some pliers to make the shape more donkey-ish, if that's even the proper term for it. Eh, whatever.
It most difficult part of making these cookies was layering all the different colors of dough into a rectangular-shaped container and then freezing it to make the individual lines of colors you see here. Also, the recipe called for lots of oil and butter, making for a sticky and oily dough that was frustrating to work with at times. Cute little cookies, BIG pain in the ass. Needless to say, I wouldn't make these again unless someone paid me to do them! XD
