Georgeous and gooey these sweet chocolate cookies come from the kitchens of

Remind me to invest in a bigger baking tray...
My recipe:
250g plain flour
1/2 teaspoon of bicarbonate of soda (I used baking powder instead)
1/2 teaspoon salt
170g unsalted butter, melted (i used lard because its cheaper, and same taste.)
200g soft dark brown sugar
100g caster sugar
1 tbs vanilla extract
1 egg
325g chocolate chips
preheat the oven to 170 degrees, or 160 for a fan oven. Remember to put grease proof paper over the baking tray before use (much easier to get them off after they've cooled slightly)
Sift the flour salt and bicarbonate of soda together in a bowl and leave aside-
In a mediumish bowl, mix the melted butter, brown sugar and caster sugar until well blended, beat in the vanilla and the egg (a wooden spoon is fine for this) until light and creamy. mix in the flour/bicarb/salt mix from before until just about blended, then add the chocolate chips and stir in with a wooden spoon again until you have a dough like mixture.
get a couple of teaspoons and start spooning the mixture onto the tray, a few centimeters apart to allow for growth. Bake for 15-17 minutes, or until a knife comes out clean when poked in the center.
Let them cool on the baking tray a bit before moving them onto a plate otherwise they'll and crack fall apart
So yeah, chocolate chip cookies a la Carme :)
