Another recipe that I actually had planned to use in my cook book and had made a sample page.

Now this is an update to my previous recipe. I've tweaked it a bit here we have mint, banana, strawberry, plain and chocolate cupcakes
CheeseCake
3 (8oz) packages of Cream Cheese
1 cup sugar
5 eggs
1/2 tsp vanilla
1 box nilla wafers
icing
1 cup sour cream
1/4 cup sugar
1 tsp vamilla
jam or jelly of your choice
1. preheat oven to 300 degrees. Line muffin tins with paper baking cups. Place one nilla waffer in each
2. Combine cream cheese, sugar, eggs, and vanilla in large bowel. Beat untill mixture is smooth and creamy. fill each cup 2/3rds. Bake for 40 minutes
3. While the first batch is baking prepare the Icing. Combine sour cream, sugar, and vanilla. Beat until smooth.
4. Remove the cupcakes and let cool for 5 minutes
5. Frost and top as desired . return to the oven for 5 minutes.
6. Remove from oven and let cool. remove cupcakes from tins and refrigerate to set
Now to do the flavors I separate 1 batch into thirds during step 2. Take that portion and prep your flavor. For banana I took a single banana blended with a splash of almond milk for liquidity and 6 drops of yellow food color. Mix into the portion of batter and continue as before. Although I used a chocolate wafers for the base and crumbs to top
For mint 2 tsp of mint extract with 6 drops green food color
Strawberry 1/3 cup blended strawberries will do
And for chocolate 1/2 cup melted chocolate chips will do
