They sold cheap roots at the store and thought i'd make a soup out of the beetroots.
Ingredients
Base
5 beetroots
2 small parsnips
3 carrots
2 onions
4 cloves of garlic
10 whole blackpepper seeds
2 teaspoons of salt
Finish
1,5 decilitre cream
2 decilitre vegetable stock
1 vegetable stock-cube
3 teaspoons of salt
1 teaspoon chilipaste (I used sambal oelek)
How to:
1. Peel the beetroot, parsnip, carrots, onions and the cloves. Chop the roots into smaller bits. Put the items in a large pot and fill with water until it covers the roots and add the salt and pepper. Bring to a boil.
2. Once the roots are boiled (it will take quite a while for the beetroot to get boiled, I'd say give it an hour or two. Use a handblender to blend everything together.
3. Add the cream, chilipaste, vegetable stock, salt, stockcube and bring it to boil. And it's done.
4. I decorated my soup with diced breast of chicken that I quickly panseared with salt and pepper. I also added a few drops of basil oil to it.
