Getting the 2012 Cookie Challenge back on track, the kitchens of Full Moon Cuisine decided that it was time to unleash the ultimate chocolate cookies on its diners. If you're a chocoholic or know one, this treat will become an instant favorite. Here's what you'll need:
- 1 stick of butter (at room temp)
- 2 eggs (at room temp)
- 1 1/2 cups granulated sugar
- 1 tsp vanilla
- 1 cup Nutella
- 1/2 tsp baking soda
- 2 cups all purpose flour
- 1/4 cup cocoa powder
- 1 cup semisweet chocolate chips
- Pinch of salt
Note: This recipe will make approximately 2 dozen cookies
To begin, in a mixing bowl combine the flour, cocoa powder, baking soda, and salt. In a separate bowl, use an electric mixer to cream together the butter and sugar, then add in the eggs (one at a time), and finally the vanilla and Nutella. Add the dry ingredients to your wet in thirds, mixing until combined, finishing by adding in the chocolate chips. Cover your bowl and park it in the fridge for at least an hour to let it set up.
As the hour nears an end, preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and use a 1 1/2" scoop to portion out the dough, making sure to space the mounds at least a few inches (these will spread!). Bake in your oven for 10-15 minutes (depending on your oven), rotating halfway through the baking. Allow them to rest on your baking sheet for a few minutes afterward before moving them to a wire rack to cool. The edges will be nice and crisp, with a chewy interior.
