
Chicken Marsala with Green Beans and Mashed Potatoes.
((Some classic comfort food for when we’re having a bad day))
**Easy Difficulty**Non-Optional Alcoholic Ingredient**
Serves 2
4 Chicken Breasts, boned and skinned
½ cup Marsala
½ cup Flour
5 Tbsp Butter
1 (8 oz) package of White Button Mushrooms, sliced
1 cup Chicken Stock
2 Tbsp Garlic, Minced
1 Tbsp Red Wine
Salt & Pepper to taste
1) In a large bowl, coat Chicken Breasts in Flour, and then in a large sauce pan set on medium high with 3 Tbsp Butter, brown the Chicken on one side until crisp. Flip and crisp on the other side. When chicken is cooked almost all the way through, deglaze with Red Wine, and remove from heat and set aside to rest.
2) Add in 1 Tbsp of Butter to the pan and pour in the garlic and sliced mushrooms. Cook until the Garlic and Mushrooms are golden brown and have released most of their moisture. Remember to stir often; scraping off any browned bits from the bottom of the pan.
3) Pour in Marsala and cook until the liquid reduces to half. Then add in Chicken Stock and cook for 3 to 4 min until sauce reduces slightly.
4) Lower the heat to medium and place chicken back into pan to cook all the way through. The breading from the Chicken and Flour will help thicken the sauce.
5) Add remaining Butter and season with Salt & Pepper to taste towards the very end before serving with Mashed Potatoes, and Green Beans.
Extra Info: If you noticed with my other recipes, I like using wine in my dishes. It brings in a completely different layer of flavor you can’t mimic with something else. You can try a wine substitute, but it will most likely not be able to stand up to the sweet, earthy notes of adding real wine to a dish. I’m not saying all dishes must have alcohol in it lol. I’m very sure you can make a delicious meal without alcohol, but for something like Chicken Marsala, you kind of need Marsala. This is a simple recipe. Some people like to get complex when it comes to Chicken Marsala, but I like to let the wine do the work for me.
I didn’t include a recipe for mashed potatoes or green beans, since they are so basic, but if you are curious, I just sautéed the green beans in butter, and I made the mashed potatoes using regular yellow Potatoes mixed with a Tbsp of butter, and some garlic powder.
I use Red Wine as well to deglaze in step one only because I like the subtle flavors red wine gives Marsala. Marsala is a sweet wine, while Red Wine has that nice dryness. It works well. Trust me. Happy Eating!
