this is a variation of something i found in one of my cookbooks
this was VERY unique tasting
what you will need
2 banana leaves....(i had one enormous one)
Extra virgin olive oil
1 green plantain (sliced paper thin)
2 tomatillos (peeled rinsed and sliced thin)
4 4 oz swai fillets (you can really substitute any firm whitefish here)
tarragon (what i did is pulverize dried tarragon to a fine powder)
1 small zucchini
2 bay leaves halved
1 small red onion
1 starfruit
preheat the oven to 350
tear the banana leaves into four 16 x 10 inch pieces (the size doesn't have to be exact, just close)
drizzle the leaves with some oil on the leaves and layer the plantains, tomatilllos, starfruit, zucchini and onions (leaving some for a garnish)
salt and pepper to taste, you can also sprinkle some tarragon on them to at this point
place a swai fillet on top of the vegetables and drizzle with more olive oil season with salt pepper and tarragon top with a bay leaf quarter
loosely fold up the banana leaves to form packages
you should have 4
garnish with reserved vegetables and starfruit
bake for 25 minutes or until done
remove from oven and let stand for 2 minutes before unwrapping
make sure you discard the bay leaves
notes......
.the original recipe stated that the fish needed to be cooked for 15 minutes at 325....when i did this my fish was still raw....
the time i provided was a rough estimate
also make sure you don't overload your packages like i did...you WILL end up with hard vegetables like i did
i also derped by putting the vegetables on TOP of the fish
the original recipe also called for dried orange peel and olives i personal thought that it would be overkill...i was right there are a lot of different flavors going on in this recipe..but everything works trust me
