Probably because unicorns are always depicted as the caste responible for that science, magic and culture in Equestria. Earthponies are the pesants caste, pegasi the warrior caste, unicorns magicians, lower nobility and art/science and finally alicorns rulers. Equestria is a feudal matriachaic society.
