Sometimes, even in the illustrious kitchens of Full Moon Cuisine, equipment will wind up failing at a critical moment. What do you do then? Tell your diners to pack it up and head home? HELL NO! With just a working stovetop, you can make some tasty cookies that will please your diners and not require too much effort or even too many ingredients. Here's what you'll need:
- 1/2 stick butter (at room temp)
- 2 cups granulated sugar
- 1/2 cup milk
- 1 tsp vanilla
- 1/2 cup creamy peanut butter
- 1/4 cup cocoa powder
- 3 cups quick cook oatmeal
- Pinch of salt
Note: This recipe will make approximately 2 dozen cookies.
To begin, mix the sugar, cocoa, milk, butter, and salt in a pan. Place this pan over a stove burner set to medium, bring to a roiling boil (stirring often). Once a roiling boil has been achieved, remove from the stove to a cool burner and allow to stand for one minute. After, add in the vanilla, followed by the peanut butter, and finally the oat meal, stirring quite often. Take a baking/cookie sheet covered in parchment/wax paper and drop heaping teaspoons of the dough there and allow to cool completely. The cookies will be quite soft and chewy!
