Cookie Challenge Week 46: Pumpkin Chocolate Chip Cookies
With the Fall nearing its end, the flavors of the season need to be celebrated. And what's more, sometimes you should even turn up the volume on these flavors. And that is what the kitchens of Full Moon Cuisine strive to do! By combining chocolate with pumpkin, these cookies are festive, celebratory, easy-to-make, and perfect for any holiday gathering. Here's what you'll need:
- 2 sticks of butter (at room temp)
- 1 cup granulated sugar
- 2 eggs (at room temp)
- 1 tsp vanilla
- 1 16 oz can of pumpkin (NOT pumpkin pie filling)
- 2 1/4 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1 cup walnuts (chopped/toasted)
- 1 cup semisweet chocolate chips
- Pinch of salt
Note: This recipe will make approximately 2 dozen cookies.
To begin, preheat your oven to 375 degrees F. In a bowl, mix together your dry ingredients: the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Mix thoroughly and set aside. In a large bowl, use an electric mixer to cream together the butter and sugar. Afterward, incorporate the eggs, one at a time, followed by the vanilla. Combine your dry ingredients into the wet in thirds, stirring until both are incorporated. After, add in your chocolate chips and walnuts, stirring to combine.
Using a tablespoon, place dollops of the dough onto parchment paper lined baking sheets, pressing down gently with your measuring spoon to flatten the dough a bit (they won't spread a lot). Bake for approximately 15-20 minutes, until you see the edges are turning a golden brown. Remove from the oven and allow to rest on the warm baking sheet for a few extra minutes, before moving to a wire rack to cool completely. These cookies will have a soft, almost spongy texture on the inside!
What isn't made better when you add chocolate chips? The kitchens here have yet to find that answer! By taking a little bit of time, you can serve a traditional holiday flavor, pumpkin, to your diners in a whole new way.
