Cookie Challenge Week 47: White Chocolate Chip Eggnog Cookie
As the winter season approaches, we find ourselves in the midst of many holiday celebrations. With that, the kitchens of Full Moon Cuisine decided to take a traditional holiday flavor, eggnog, and present it in a whole new way. By adding the richness of white chocolate, this holiday beverage makes for an excellent cookie. Here's what you'll need:
- 1 1/2 sticks of butter (at room temp)
- 1 1/4 cups granulated sugar
- 2 egg yolks (at room temp)
- 1 tsp vanilla
- 1/2 cup eggnog
- 2 1/4 cups all purpose flour
- 1 tsp nutmeg
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1 cup white chocolate chips
- Pinch of salt
To begin, preheat your oven to 300 degrees F. In a mixing bowl, combine your flour, baking powder, cinnamon, nutmeg, and salt together, making sure they are all incorporated. In a large bowl, use an electric mixer to cream together the butter and sugar until they are light and fluffy. Afterward, add in your egg yolks (one at a time), then your vanilla, and finally mix in your eggnog. Once the wet ingredients have been mixed together well, start to add in your dry ingredients in thirds, mixing well each time. Once both sets of ingredients have been combined, add in your white chocolate chips.
Use a 1 1/2 tbsp scoop to dish out your dough onto parchment paper lined baking sheets, keeping the dough a few inches apart. Bake in your oven for 20 minutes, rotating halfway through, and removing when you see golden brown starting to appear around the base of the cookies. Allow to remain on the baking sheet for another minute, before moving them to a wire rack to cool completely. The cookies will grow crispier as they cool.
Eggnog is a traditional beverage you'll find at many a holiday party this season. In this form, you can take the drink with you to go and present it in a way that your guests will not be expecting.
