
Chocolate Chunk Chipotle Cookies

**Easy Difficulty**
Makes about 24 cookies (give or take)
6 oz Semi-Sweet Chocolate, roughly chopped
1 cup Unsalted Butter, softened
1 ½ cup White Sugar, granulated
2 large Eggs
2 cup All Purpose Flour
1 tsp Baking Soda
½ cup Cocoa Powder, unsweetened
2 tsp Powdered Chipotle Chilli
1 tsp Instant Espresso Powder
½ tsp Salt
1) In a large bowl, mix together soften Butter and Sugar until it forms a creamy texture. Then add Eggs and beat into butter mixture lightly.
2) In a medium bowl, sift together the dry ingredients of Flour, Baking Soda, Cocoa Powder, Espresso powder, Salt and Chipotle Powder. Carefully and gradually mix dry mixture into Butter and Eggs mixture, mixing until dough is uniform and smooth. Pour in Chopped Chocolate and fold gently into the dough.
3) Portion about 1 Tablespoon sized chunks of the dough and place on a baking sheet lined with parchment paper. You can use a Tablespoon to help portion out everything if you like to make it easier than just eyeballing it. The cookies spread out when cooking so keeping them about 2 inches is a good idea.
4) Bake for 15 minutes at 350 degrees F. Remove from oven when ready and enjoy the light spice, and ooey gooey chocolate bliss!
Extra Info: I like easy recipes. I really do. People always ask me why I like easy recipes if I’ve been in the culinary business for so long. Shouldn’t I like super complex, fancy cooking? I always tell them, I do love complex flavors, yes. But, that doesn’t mean it has to be complicated to make. Like these cookies for example. It’s a simple recipe and easy to make but such a complex layer of integrated flavors. Sweet like a cookie should be, and rich and bitter from the chocolate, and earthy from the espresso. And, then you get the zesty spice from the chipotle right at the end for a small pleasant kick. This cookie won’t set your mouth on fire, but it has a detectable zing to it. If you can't find Espresso powder, you can use instant coffee mix. Just grind up the instant coffee in a coffee grinder, or you can crush them with a mortar and pestle. If you have none of these, you can spread the instant coffee on a cutting board and roll your rolling pin over it. If you don't have a rolling pin, use the side of your kitchen knife, but be careful!
When I was just a kid, my mother always said never to eat sweets before your meal because it’ll ruin your appetite. Well, I think this cookie would be a great start of a meal. For some people Spicy foods stimulate the appetite. And so does caffeine. Not to mention the feel good emotion people get from chocolate and sugar. Why not have a cookie as an appetizer? Who says we can’t have cookies before a meal instead of after? I say down with meal uniformity! Equality for all foods! Freedom to all foods to get eaten when ever, and where ever! *Tiger roar*
