Yes I do this stuff too -- this is sequencing, when you more or less have fun doing your own version of game music. Some like to remix, but I prefer to attempt to mimic the original sounds and try to get it as close as possible. Nothing like the original, eh. :Þ I actually did this a year or so ago, found it today and thought I'd slap this up. I might to another today, since it's my day off.
I do this using ZSNES and slowing it down, canceling all but one of the eight sound channels so I can concentrate one at a time. I then use a save state (which I reload many times) to get back to that exact moment to make sure I have the correct note for the correct amount of time. I'm sure this varies from others' methods, but that's just mine that I got into one day. It's fun fun fun. :Þ
I always liked this music that played in the fiery tower, very unique! Love it. The only part I really got wrong (to my knowledge) was the sawtooth where it's supposed to sound "wavier" but my meager midi program does not have such an option, so I had to do with what I had.

I've done some sequencing of ToP (Premonition was the one I did), and one thing that struck me is that Wolf Team (the designers) were seriously pushing the limits of the SNES hardware. The ToP music is a prime example of this: while the SNES technically supports 8 audio channels, through some fancy mixing done in software they were able to bump that up to 16.
They used this same trick with the original Star Ocean (yeah, they changed their name from Wolf Team to Tri-Ace), which is why both games are able to manage their big orchestral sound when compared to other games for the SNES.[/emulation geek]

Well, it's not /really/ 16 channels, since they're doing some fancy software mixing to simulate it, but regardless of the technique, the results are awesome. *wags*
I'll have to see if I can dig up my old MIDIs, though honestly, I can hardly stand to listen to them anymore. I did the bulk of my sequencing using Yamaha's XG software synthesizer, which sounds absolutely awesome. Unfortunately, Yamaha discontinued it some time ago, so it won't work on my current machine (works fine on my laptop, though).
I'll probably convert them to mp3 on my laptop and post them in that form. :)
