Raisin Walnut Oatmeal Cookies for Santa
(Santa knows if you’ve been a Nice or Naughty Fur. Most likely you’ve been Naughty, so here’s something to bribe Santa with into giving you presents.)
**Easy Difficulty**
Makes approx 24 cookies
3/4 cup All-Purpose Flour
1 ½ cups Rolled Oats
½ cup Butter, softened
2/3 cup Light Brown Sugar, packed down
1 large Egg
½ tsp Vanilla Extract
½ tsp Baking Soda
½ tsp Ground Cinnamon
½ cup Raisins
½ cup Walnuts, chopped
1/4 tsp Salt
1) In a large bowl, mix together Brown Sugar, Butter, Vanilla, and Egg until smooth and set aside.
2) In a different bowl, mix Flour, Cinnamon, Salt, Oats, Walnuts, Raisins, and Baking Soda. Stir mixture into the Brown Sugar and Butter Mixture from step 1.
3) Chill in the fridge for an hour. You can chill them over night too. This makes them thicker as they bake. When chilled, scoop the cookies with a Tablespoon onto a baking sheet with parchment paper; about two inches apart.
4) Bake at 350 degrees F for approximately 15 min or until golden with a soft middle. Oven times may vary depending on your oven strength. Remove from oven and let them rest for 10 min before serving in order to allow them to carry over cook.
5) Serve to Santa as a bribe and hope for the best, you Naughty Fur!
Extra Info: I felt like it's always a good idea to go back to basics once in a while. And, what is more classic than the good old fashion Oatmeal cookie? I really like chewy cookies so this recipe uses only brown Sugar and no regular white Sugar. You can easily substitute the Walnuts with Pecans if you like. I find if you chill the cookies it makes them nice and thick which will make them softer in the middle. The crisp golden outside perfectly compliments the chewy inside. This cookie recipe makes a surprisingly good Holiday Ice Cream sandwich. Just use peppermint candy cane ice cream in between two of these cookies. Either way you present them, “Sandy Claws” will love them.
