This very delicious eggnog contains ale, instead of rum or bourbon. It is very delicious, but most people are put off my the fact that it has beer in it. Try it anyway.
3 eggs, separated
240 ml whole milk
240 ml heavy cream
45g sugar
6 oz (half a bottle) dark, sweet ale
Nutmeg
In a cocktail shaker, mix egg yolks, milk, cream, sugar and a good amount of fresh grated nutmeg (about a 1/2 teaspoon) well. Add the ale. Shake some more--this will cause a pressure build up, so be prepared.
In a bowl, whip the egg whites, adding a bit of sugar, until stiff peaks form.
Fold the egg whites into the yolk mixture in your serving bowl.
When serving, garnish each glass with a little bit of nutmeg.
Enjoy!
Notes:
Contains raw eggs, they make pasteurized egg products, if you're concerned about that sort of thing.
Any dark, sweet ale works for this. Avoid overly hoppy or dry ales. My last batch was made with Sam Adams' Chocolate Bock. The slight chocolate flavor goes well with the other flavors of the eggnog.
This isn't the overly sweet, gross, thick, disgusting eggnog you buy in the store. It is light and airy, and delicious.
