Fantastic fruit cake from the kitchens of

Contains PORK!
prep time: 30 minutes
Bake time 2-3 HOURS
Tools needed:
meat grinder
large pan (I used a 12" deep round. two smaller loaf pans will work)
Mixing bowls
pastry cutter, if you have it. otherwise use two forks
wax paper
Ingredients:
1 pound salt pork
1 cup boiling water
2 cups sugar
3 eggs
1 cup molasses
1/4-1/2 pound citron
1 package raisins (12-16 ounces)
1 package GOLDEN raisins (12-16 ounces)
1/4-1/2 walnuts, chopped
3 teaspoons cinamon
1 teaspoon ground cloves
1 teaspoon allspice
1 teaspoon nutmeg
5 cups flour + some extra
set oven to 250 degrees
WASH YOUR HANDS to start. clean under the nails too. you'll be handmixing this.
Line your pan or pans with wax paper.
Put water on to boil.
Grind salt pork.
put salt pork in bowl, pour the boiling water over it.
set aside
Beat the eggs.
cream the sugar, eggs, and molasses together. these is easiest with a pastry cutter, but you can use a potato masher or forks if you don't have one.
But the fruit and nuts in a bowl, mix with enough flour to make them white.
Sift flour with spices. (or mix in bowl with hands)
Mix everything together. THIS IS HEAVY. REALLY REALLY HEAVY.
don't even try stirring with a spoon. it won't work. turn it over with your hands. tuck hands under bottom, turn whole mass over in bowl.
Once thoroughly mixed, pour into the pan or pans.
Put in oven for 2-3 hours. check with toothpick to see if its done, starting around two hours. thinner cake cooks faster. thicker loafs take longer.
You CAN soak this in rum afterward if you like, but it really isn't necessary.
This recipe creates around 4-5 POUNDS of fruitcake. You may want to cut recipe in half if you're not sure about whether you can eat that much fruitcake. (my small family and friends ate all of it within a week)
This is a hefty item, so a small slice works well in place of something like an energy bar. travels well. makes a great pick me up for that afternoon lull.
