I don't always take pictures of my food.

But damn.

If I was stuck on a desert island... I'd want to have my Tamale equipment, and that island better have corn.
This meal began this morning around 10 am, I finished it just 40 minutes ago, just about 2 am. I know I'm doing good when my mom says my tamales taste like the ones my Grandmother used to make, and I never met the woman. Very much a labor of love.

These tamales are filled with grilled veggies and queso fresco, topped with pumpkin based sauce and topped with cilantro and diced onions. Served up with a side on refried beans made from scratch and a dish of fresh pico de gallo. The only thing missing from this plate is my Mother's rice, but we have an electric stove here, and I can never make the rice right. Tomorrow I'll go to my Mom's house and have her make me some rice. :>
