Pink Sala Coconut Macaroons
(A tropical and adorable pink spin on the classic Coconut Macaroon for Valentine’s Day)
**Easy Difficulty**
Makes approx 24 Macaroons
4 large eggs, Egg White only.
2 tsp Red Sala Syrup
1 cup white Sugar
¼ tsp salt
½ cup Cake Flour
3 ½ cups dry shredded sweetened Coconut
1) Make a double boiler with a heat safe bowl that fits over a pot of simmering water. Whisk together Egg Whites, Sugar and Salt. Whisk until the mixture becomes creamy and rich. It should be warm, but not hot.
2) Remove from heat and mix in Sala Syrup, Cake Flour, and Coconut shreds. The Sala should make the mixture into a beautiful pink color, and give off a sweet, and lightly floral aroma. Cover and refrigerate for at least 2 hours.
3) Once mixture is firm, preheat oven to 325 degrees F. Scoop 1 tablespoon portions of the batter onto two parchment paper lined baking sheets. Space the mounds a few inches apart because they will expand while cooking. Bake for about 15 to 20 min or until the bottom is golden brown, and the mounds are stiff.
4) Let cool for 10 to 15 min before serving. Enjoy a cute color, taste and aroma Sala brings to this already great Macaroon recipe. Happy Valentine’s Day!

The brand I like to use is called “Hale’s Blue Boy.” This company makes a bunch of different exotic syrups that can be used for baking, as toppings, and for mixed drinks. This recipe is great with their Jasmine Syrup. Also called Mali Syrup. Sala, Jasmine /Mali. What ever you use, it'll be great because the syrups are always sweet. It’s floral and just smells amazing.
