
I made these cupcakes last spring on a whim. For those of you that have never heard of hummingbird cake, it's a classic down-South super-sweet cake that first originated from a recipe printed by Southern Living magazine in February 1978.
There have been many variations of this recipe over the years, but pretty much all of them contain these core ingredients: mashed banana, crushed pineapple, cinnamon, pecans, and cream cheese frosting. Sometimes the pecans are chopped then sprinkled on top of the icing as a garnish, other times they may be crushed then added to the cake batter. Other variations of the recipe might include flaked coconut, shredded carrot, or walnuts.
