I miss New Orleans, I went there on vacation once back in 2010 during Mardi Gras and I've been itching to go back ever since. Well, since I couldn't be there last year, I decided to celebrate in my own way by making these Mardi Gras colored cupcakes! Using a technique I learned online, I combined three different colors of icing into one bag to make them swirl together when I piped it onto the cupcake. The colors of Mardi Gras: purple, green and gold, stand for justice, faith and power, respectively.
