Some of my favorites as a kid included the Pokémon anime, ReBoot, Rocko's Modern Life, Tiny Toons Adventures, The Tick, Ed Edd n Eddy, and Courage the Cowardly Dog, and more recently I have been watching Pepper Ann on Disney+

I liked animal-centric children's programming such as Little Bear, Franklin, and The Busy World of Richard Scarry.
