Thick throat issues

Back in 2021 I got hit with a heat stroke. I believe it has permanently damaged my throat. From trouble inhaling, to persistent dry throat, I've had some issues. As of last year, I've been having trouble with spontaneously choking on food I swallow, which gets trapped into my throat and forced me to gag and vomit.
This year, especially since the summer started, I've been having persistent choking fits on about anything I eat. It took me 7 years to get a new family doctor after the last one moved away. And since I got this new one, he's taken 3 years to get in touch with me for an appointment.
As of now, I'm struggling with dizziness, weakness and sensitivity, and a loss of appetite. I buy food to eat, but hardly finish it, and I'm struggling with choosing the right food to even eat. Staying hydrated helps, but when your throat is swollen still, does it really matter?

Due to it lasting this long, I’ve gotta wonder: could it be thrush? (Yeast infection)

From what the ER told me a few weeks back, my throat looks fine, just swollen. A throat specialist talked to me and recommended I eat ice cream, but they NEVER mentioned just how much of it, and for how long. I did eat ice cream, and it changed nothing. The irritation faded but the swelling never disappeared.

Perhaps some prednisone or the like, at least for the symptoms, unless you've had that already.

I managed to get an emergency appointment with my doctor and he's prescribed antacids for a bit, while I'm on a pending list for a priority gastroscopy. No clue when that's gonna happen or when I'l get the appointment.
