General
I'm new to this genre, so I decided to start with a small game called Mortal Shell 🤔

Dead Cells was a very fun game for being a roguelike sidescroller. Very challenging game.
No Rest for the Wicked (Early Access) is one of the most beautiful titles, very difficult aswell and still in development. It features a story where you help rebuild the town-hub.
Tunic is another great game with good combat and an incredibly cozy / beautiful albeit simple style.
Im sure the original "Soulsborne" games are somewhere on your list already - they are insanely packed with gameplay and lore, depending on the installment, they can be very clunky and difficult.
Monster Hunter, while a totally different vibe, has many of the elements in combat that make a souls-like what it is so it might count aswell!
The Actual mainline Dark Souls games I HATE with a Passion. But their side games / spinoffs have all be fantastic.
I personally hate the genre as a whole, but Bloodbourne was weirdly fun, Elden Ring is special because you can pretty much play it like Skyrim: Chose a random direction, and take your time. And it makes the game as easy / as hard as you wanna make it.
And Seikiro, its more skillbased because its main system is parrying.
( Bloodborne also looks fantastic. This game has always been special to me in terms of visual design )
Besides key areas that are barred to your progress or requiring key items, there is literally no limits.
Literally, Skyrim that shit.
Though the gameplay is too short honestly
Hollow Knight I think fits into Soulslike + Metroidvania both!
Elden Ring is also AWESOME!! Visually stunning, and I love the freedom of exploration!
