If I'm feeling up to it, I'll add in some eggs and bacon/ham for a more complete breakfast.
I brew w/ pour over, french press, aeropress, and moka pot, though mainly pour over because it's fastest. :P
Usually char siu pork, crispy pork, tocino (Filipino bacon), or sweet longaniza (Portuguese sausage).
Some days I'll get a hankering for something more substantial, and I'll chop up onions, carrots and Spam, pull out the frozen peas, and set them all up in small dishes. Then I fire up the wok on the Banjo Cooker on the patio, add oil, then scramble an egg in the shimmering hot oil. It makes it really puffy and fluffy! Add the veg and cook a bit, then the rice, salt, seasonings and sesame oil, then finish it off with the peas and spring onion.
Or if I'm in a more Western mood, fried potatoes O'Brien, scrambled eggs, sweet Italian sausage bits, and shredded cheese. Sometimes I kick it up a notch with corned beef hash.
And if I'm in a sandwich mood, then 2 fried eggs, sliced ham, bacon and a sausage patty on a toasted hard roll with cheese, salt, pepper and ketchup.
Other times I might do waffles! I bought Waffle House mix and made a big batch of waffles, then froze them, so I can have them whenever. I do the same with Jiffy Corn Muffin mix. Make a big batch of waffles or pancakes, then freeze them.
And then some days I do steel-cut oatmeal. Oh man, I love steel-cut. I add a cup of oats to the saucepan, along with a tablespoon of ghee or butter, then toast the oats over high heat. Once they have some color and a nutty aroma, I add the water and cook. Gotta add a bit of salt, or it tastes like wallpaper paste. For add-ins, I'll use raisins, chopped apricots, dried cherries or blueberries, whatever suits my fancy at the moment.
I generally skip breakfast when I'm working but on week ends I've got into the habit of making Irish soda farls
But goat does sound good though.
We ran out of bread and cereal...
My next favourite breakfast is waffles with fried eggs and sausage.
After that, eggs on toast.
In both cases, the egg yolks are runny.
Other than that, omelettes can be fun.
I am curious what this inspiration is gonna be for. Guess I'll have to wait to find out.

If I'm not commuting then I'll make avocado toast with eggs. And if I'm lazy, I'll eat a muffin with milk. What do you normally eat? Maybe you can inspire me too.
