I enjoy the darker meat as well. LOVE bacon, but... I can't eat too much of it, or I begin to feel ill.
Syrup on my bacon, however, is the remedy.
And it is good when it is both crispy and tender.

Meat itself is good when it is well done, but not to the point where it is dry. Then it is just... bad.

Don't eat bacon that often. Hardly ever do. Which is a bummer.
