Those who know me will attest that I am a gourmand (lots of food) rather than a gourmet (fancy food). I am nearing my 61st birthday, and my body has played a totally, completely and utterly savage trick on me. It seems, and the gods alone know why, that I am now lactose intolerant. I am not a cheese fanatic, but I will happily admit to loving certain varieties. Especially Swiss, Jarlsberg and peccorino Romano.
This might not seem like such a disaster, until you think it through. Just how many things have cheese in them, for example. Or sour cream, or yoghurt. And ice cream. And mac and cheese (a life-long favorite). How about pizza? And the list goes on and on. Cheeseburgers, beef stroganoff, spaghetti, lasagna, and ...
