recipe: minestrone

so. minestrone. for some reason i fail at cooking for one person - i ended up making 5 quarts of soup.
but yes i think i might be crazy... FOR THIS SOUP. for simplicity's sake here is the stuff more or less in order of when you would start messing with it
1# pack smoked ham hock (boil for 1 hour, then shred) + water to cover
1# pack chicken gizzards (toss in salt and oil, roast at 450F till brown then process fine)
2 tbsp mexican oregano, ground into a powder (toss in w/ ham hock)
3 heads garlic (drizzle with olive oil and pack in foil w/ 1c water, roast w/gizzards, spoon out and mash)
1 orange sweet potato, diced
1 crown broccoli, diced (well as best you can, for fucks sake it is broccoli)
1 green bell pepper, cut into 1.5-2" bits
1/3 cup elbow macaroni (what, it's not the fucking star of this soup)
1 14oz can diced stewed tomatoes w/liquid
1 14 oz can dark red kidney beans
1/4 a head of cabbage in 1.5-2" square bits (probably need more water at this point)
salt and pepper to taste
total cooking time for me was about 90 minutes, but to pull that off you have to start roasting the gizzards and garlic right at the beginning. fuck yeah, this should last through my cold :)
