I use Ableton Live 6.0 for early recording, sequencing, and arranging. Also hosts my VST plug-ins like EZDRummer which I do my drum tracks with. The rest are actual, recorded live instruments. If you go that route, you'll need a couple good mics, and a good soundcard, depending uopn how many inputs you desire, as well. I use a Delta 1010LT pci card (PCI is still faster than Firewire and USB 2.0)

I do my post mixing, editing, and mastering in Adobe Audition 2.0. Ableton does all that too...but I like Adobe better for that end...plus it gives you more options.
