So I have this recipe I like making. I figured I would post it up.
I got a wok last year sometime for myself that is great for making soup.
I don't really measure accurately.
~I use a pack of bacon, however it comes, and render it in low heat.
~Add some pineapple to absorb some bacon flavor and release some juices, which mix well with one another.
~I remove the bacon and pineapple after rendered and crisp up the bacon in a pan.
~Then, add some vegetables, depending on what I have. I already have a good flavor with the bacon fat and pineapple. I add some flour for a roux, and sometimes add some fresh ground pepper here if I have it.
~Ideally, I try to use whatever organic ingredients I have on hand, carrots, onions, celery. Bell peppers and garlic work well too. I caramelize them in the bacon fat, barely cooking them.
~I add some stock, and since the bacon has a lot of flavor and the pineapple will intensify it, I usually use vegetable or Thai stock. It doesn't really need meaty stock like chicken or beef.
~Then I add some diced potatoes. I like red ones for this recipe, but any kind is good.
~I add the stock slowly and try to leave the soup thick. After I get enough stock in, I put the pineapple in. When I serve it, I can sprinkle some cheddar cheese and let it melt on top. Then I break up the bacon and put that on top of the cheese. A lil Parmesan cheese works well too.
~As for spice, it really doesn't need much. Some white pepper, maybe a pinch or two of salt.
