I made Tiropitakia's today. I learned to make them in catering back in highschool. They've always been a comfort and a fave recipe.
It's hard for my to share the recipe with you because I just eyeball it and guess most of the time. There are recipes online if you would like to compare. But... Here's the gist of mine. (again.. measurements not 1005 accurate. i'm guessing. :p)
1-2 Cups of grated pepperjack cheese
1-2 Cups of Feta cheese
1 egg
a teaspoon fine white pepper (or just throw in black pepper like i do.)
a pinch of salt
Filo dough
1/2 a Cup Un-salted butter
a tablespoon italian seasoning.
Get a baking sheet. Set oven to 375.
Mix pepperjack, feta, egg, salt,and pepper together in a large bowl. It should be just slightly moist from the egg. Mix it well.
In a separate bowl. Melt down the butter, stir in italian seasoning. Set aside.
Get out filo dough. Cut into strips about 2 inches wide and 6-8 inches long.
Take a the cheese mix and place some in the left hand corner of the filo dough strip, about the size of the tip of your thumb is the amount you'll need.... wrap right to left so it make a shape like a triangle.
Set on baking sheet. One you've filled the baking sheet brush the tops lightly with butter mixture and set in the oven for 5 minutes or until dark gold and crispy. Just keep repeating this process!
Remember to keep the filo dough covered in plastic and a damp cloth when not using because it dries out very fast. But be careful to not let moisture touch it directly or it will turn into goo. Filo dough is tricky.
