Roadblock, Transition on Hold =(

So apparently, being a vegetarian for 10+ years has wreaked havoc on my body. Continuously low amounts of protein and iron have (for now) destroyed my body's ability to lose weight. Throw on anemia, skin discoloration, and a slew of other minor problems, and I need to fix my existing body before I try to turn it to anything else.
Basically:

One thing to remember; there are a number of doctors who are overcautious about HRT - usually from fear, some from simple unwillingness to learn about it. Anemia is not a reason to withhold HRT at all, and more important than weight/BMI is blood pressure and lipid balance. If those are out of whack, absolutely they should be worked on first.... but as soon as you go on HRT your weight will probably change by 10 pounds, plus or minus. (I lost 15 pounds my first six months.)
Regarding weight loss - I'd recommend walking/running/jogging, because you probably don't want to put a bunch of muscle on your arms/shoulders with what you'll be doing.
Well TG and body shaping for it is on the backburner. I'm going to building as much muscle as possible to better burn off the weight. Then, when that's done, I'll switch to running/ellipticals and let the upper body languish a bit.
The only problem is that right now I have an injured knee, which is making it really hard to get any kind of cardio exercise done.

I've always heard corn, beans, and squash are the food pyramid for vegetarians. Do you have access to all of those?
